  • 2 Wagyu beef ribeye steaks 
  • Salt and pepper to taste

Instructions:

  3. Grill or sear the steaks for 3-4 minutes on each side for medium-rare, or until desired doneness.

  • 200g rice noodles 
  • 2 onions, halved 
  • 4-inch piece of ginger, halved 
  • 3 star anise 
  • 3 cloves 
  • 1 cinnamon stick 
  • 2 cardamom pods 
  • 4 cups beef broth 
  • 2 tablespoons fish sauce 
  • 1 tablespoon sugar 
  • Bean sprouts, fresh herbs, lime wedges, chili slices, for serving. 

Instructions: 

  1. In a large pot, char onions and ginger over an open flame or under the broiler until slightly blackened. 
  2. Place charred onions and ginger, star anise, cloves, cinnamon stick, and cardamom pods in a cheesecloth and tie to make a spice bundle. 
  3. In the same pot, add beef broth, spice bundle, fish sauce, and sugar. Bring to a boil, then reduce heat and simmer for 30 minutes. 
  4. Cook rice noodles according to package instructions, then drain and set aside. 
  5. Remove the spice bundle from the broth and discard. 
  6. Add thinly sliced Wagyu beef to the broth and cook for 1-2 minutes until just cooked through. 
  7. Divide cooked rice noodles among serving bowls and top with the cooked Wagyu beef slices. 
  8. Ladle hot broth over the noodles and beef. 
  9. Serve with bean sprouts, fresh herbs, lime wedges, and chili slices on the side.
