Cooking and Serving Asian BBQ Wagyu

Asian BBQ Wagyu is designed to be cooked hot and fast. Take the meat from the fridge and let it lose its chill so the marbling softens, then heat your grill plate, pan or oven grill until it’s properly hot. Place a few slices on at a time, overcrowding makes them steam rather than sear. The fat caramelises at the edges, giving you a golden crust with a juicy centre. A sprinkle of salt and a hint of spice is often all you need. 

For a Korean food inspired spread, build a marinade with soy sauce, sesame oil, garlic, sugar and a touch of Korean chili powder. Marinated slices are perfect for tabletop grilling, served with kimchi, white rice, fresh veggies and dipping sauces, all wrapped up in lettuce. The original recipe approach (quick marinade, hot grill, fresh accompaniments) is hard to beat.    

For Japanese yakiniku, lighter is better: a splash of soy, sesame and plain rice lets the Wagyu sit centre stage. We also stock premium Japanese sauces like bold miso soy and citrusy ponzu, selected to complement Wagyu rather than overpower it.  

Asian BBQ Wagyu also works beautifully roasted in the oven for ribs, sweet glazed chicken-style sides, slow cooked pork dishes, or as part of a larger menu of shared plates. Quick tips: don’t freeze cooked Wagyu, freeze uncooked slices instead. The perfect spot for Asian BBQ Wagyu is a hot, well-spaced cooking surface. And don’t drown it in sauce, Wagyu is the star, everything else should accompany.
