Wagyu Sirloin loves a hot surface. It needs a high-heat sear to lock in juices and develop a crust that complements its firmer texture. But it also benefits from rest, that moment off-heat where everything softens and settles.
For the best result, let the steak reach room temperature before cooking. Season lightly with salt and pepper. Sear on a hot pan or grill until a crisp edge forms. Rest for 5 minutes before slicing to keep the juices intact.
